Hi Paul! I've always had problems recording acoustic. I purchased a plugin called MaxxVolume from waveaudio that helped raise the bottom levels allowing me to finger pick more softly. My guitar is an ovation with a piezo pickup. Godin would be a better sounding guitar...
Yes, I've also had varying results recording acoustic guitar. The guitar mentioned above is recorded by putting an Audio Technica AT2020USB mic about a foot from the sound hole. It gives a nice booming base if done just right and later editing out the slide squeaks. But I live in a very active and noisy city so when the jackhammers startup I turn to the Cordoba 55FCE with two mics built in and connect it via Apogee JAM with USB. Then I put on headphones and cocoon into the DAW. Again the gain and settings are touchy to keep the squeaks from ruining things. I hate to give in to the cheap electric Epiphone I bought but is required occasionally. I bought it along with the Fishman Tripleplay intending to use it for MIDI because I am better at guitar than keyboard. But that doesn't interpret 4-finger chords so eventually I abandoned it to an Impulse USB keyboard. Note: the Epiphone detunes while playing as the whole neck can move slightly and steel strings are so fussy--the repair shop said it was a "Feature" and can't be repaired.
Interesting! I looked at the tripple play too and instead went for a software plugin called Midi Guitar 2 which tracked my guitar as an effect plugin. It did a good job at tracking monophonic instruments but chords were problematic. My other acoustics are by fender and Yamaha in the lower end. You need good finger tips to play them for long periods of time...
