I would like to suggest maybe Piano might work better than organ? I think it would give the song a smoke filled Tavern vibe...

Hello, @ Scotty 1) Regarding the mastering, thank you for the references, I will communicate with them a little later. 2) Before we think of a piano sound, I think trying the sound of a Hammond B3 but playing an octave lower would be a winner; Namely, ideal to play 'sustained chords' in frequencies between 'guitar / voice' and the bass, but also ideal for making flourishes in the empty spaces left by the singer (... in the two parts before the solo of Sax). @ Tim / About the filling, thank you for the comment ... I must say that this is what came to my mind for quick result ... However, that does not prevent trying something other with the singer's mix if you wish.
